Pork Carnitas Frittata Recipe

Ingredients
  • 1 tsp bottled minced garlic or 2 fresh garlic cloves, minced .
  • 12 large eggs .
  • 3 tbsps butter, divided .
  • 2 tsps fresh lime juice .
  • 1 1/2 tsps salt .
  • 3/4 c water .
  • 1/4 c cilantro leaves, sliced .
  • 1/2 c shredded cheddar cheese .
  • 4 tbsps onions, sliced & divided .
  • 1 1/2 c pork, sliced thin into 1 by 1/2 inch strips (leftovers works great) .
  • 1/3 c fresh tomatoes, seeded & sliced

Directions
  • Step #1 Saute pork, 3 tbsps onions & garlic in 2 tbsps butter in small skillet over low heat/flame.
  • Step #2 Saute till onion is soft, about3 to 4 mins.
  • Step #3 Add lime juice & remove this from heat & set aside.
  • Step #4 Melt remaining 1 tbsps butter in large nonstick, oven-proof skillet over med-heat/flame.
  • Step #5 While butter is melting, whisk eggs, water, salt together in large bowl till light & fluffy.
  • Step #6 When butter is bubbly, pour 1/2 of egg mixture into skillet.
  • Step #7 Cover up & cook till eggs are set on bottom (they may still be runny on top).
  • Step #8 Sprinkle top pork mixture evenly over eggs.
  • Step #9 Carefully pour remaining eggs over pork, cover & place this in preheated 350°F oven for about 12 to 16 mins, or until eggs are set.
  • Step #10 Remove from oven.
  • Step #11 Sprinkle top with cheese & return to oven till cheese is melted, approximately 7 to 10 mins.
  • Step #12 Remove from oven & sprinkle with cilantro leaves, tomato & remaining 1 tbsps onion.
  • Step #13 Let set 5 mins before cutting.
