Italian Meatloaf ( Polpe Hone) Recipe

Ingredients
  • 1 1/2 tbsps sliced fresh parsley .
  • 1 c water .
  • 1 beef bouillon cube .
  • 1 white onion, sliced .
  • 1/2 c flour .
  • 1 pinch nutmeg .
  • 1 egg .
  • 1/2 c olive oil .
  • 1 lb ground beef .
  • 1/4 tsp salt & pepper .
  • 1 c sliced carrots .
  • 1 lb ground veal .
  • 3 oz prosciutto .
  • 1 c sliced celery

Directions
  • Step #1 Preheat the oven to 350°F.
  • Step #2 In a medium skillet, heat the oil & saute the carrots, celery, onion & parsely for 7 mins stirring every once in awhile.
  • Step #3 Remove the pan from heat & set aside.
  • Step #4 Cut half of the prociutto into strips & mix with the ground meat in a medium mixing bowl.
  • Step #5 Knead the ingredients together until the ground meats are well mixed.
  • Step #6 Dissolve the bouillon cube in the water to make the broth.
  • Step #7 Add the egg, flour, broth, salt.
  • Step #8 pepper & nutmeg.
  • Step #9 Knead well by hand.
  • Step #10 Add the vegetable mixture into the meat mixture & knead well by hand.
  • Step #11 Mold the mixture into a loaf & place this in a 9-inch casserole pan.
  • Step #12 Place the remaining prosciutto strips across the top of the loaf.
  • Step #13 Bake 50 mins or until centre of the meat is no longer rare.
