Chile Coloradoi Recipe

Ingredients
  • 2 tbsps vegetable oil for browning
  • 5 lbs beef chuck, cut into 1 1/2-inch cubes
  • 2 (7 oz) cans sliced green chilies
  • 12 serrano chiles, finely sliced
  • 1 bunch cilantro, sliced
  • 20 fluid oz water
  • 2 small yellow onions, finely sliced
  • 12 fluid oz beer
  • salt & pepper to taste
  • 2 (28 oz) cans whole peeled tomatoes, mashed
  • flour for dredging
  • 2 tbsps cumin

Directions
  • Step #1 Heat oil in a heavy bottomed pan over medium high heat.
  • Step #2 Dredge beef cubes in flour.
  • Step #3 Cook in hot oil until browned on all sides, reducing heat if necessary.
  • Step #4 Add tomatoes, onions, green chilies, water, salt, beer, serrano chiles, cumin, & pepper.
  • Step #5 Cover & let simmer for 2 hrs.
  • Step #6 Add sliced cilantro, & let simmer 1 hr longer.
