Eggplant (aubergine) Moussaka Recipe

Ingredients
  • 2 tbsps tomato paste .
  • 1/4 c pine nuts (optional) .
  • 1/2 c raisins .
  • 2 tbsps vegetable oil .
  • salt & pepper .
  • 1 tsp cinnamon .
  • 2 large eggplants, sliced .
  • 1 large onion, sliced .
  • 1/2 c slivered almonds .
  • 1/4 c water .
  • 1 lb ground beef .
  • 1 c vegetable oil (for frying) .
  • 1/2 tsp nutmeg

Directions
  • Step #1 In a large skillet, brown the onion.
  • Step #2 Add the ground beef, pepper, cinnamon, salt, nutmeg.
  • Step #3 When the meat is cooked, add the tomato paste & water (you can dissolve the tomato paste in water before adding it to the meat mixture).
  • Step #4 Fry the eggplants slices until golden brown on each side, set aside on paper towels to absorb excess oil.
  • Step #5 Line the oven pan with one layer of the fried eggplant slices, & raisins, sprinkle with almonds/pine nuts , add a meat mixture layer, then add a final layer of eggplant slices.
  • Step #6 Preheat oven to 350 degrees F.
  • Step #7 Bake in preheated oven for 45 mins.
  • Step #8 Serve hot.
