Croissant Bread Pudding Recipe

Ingredients
  • 1 3/4 c cream .
  • 1 1/2 c milk .
  • 16 small croissants .
  • 1 vanilla bean .
  • 3 eggs .
  • 3/4 c raisins .
  • 4 egg yolks .
  • 3/4 c sugar

Directions
  • Step #1 Preheat the oven.
  • Step #2 Set the temperature of the oven at 320ºF Tear up the croissants.
  • Step #3 Roughly tear the croissants into pieces, put them in a bowl & add the raisins.
  • Step #4 Make the custard.
  • Step #5 Start with the vanilla bean.
  • Step #6 Make an incision down the center, scrape the pulp out onto the bean & put it in a saucepan.
  • Step #7 Next add the cream & milk & heat over a medium temperature.
  • Step #8 When the custard starts to boil, remove the saucepan from the heat.
  • Step #9 Put the eggs & egg yolks in a bowl, add the sugar & begin whisking.
  • Step #10 Mix in a little hot milk, pour it all back into the saucepan & mix thoroughly.
  • Step #11 Using a sieve, strain the custard over the croissants & raisins.
  • Step #12 Make sure they are entirely submerged in the custard.
  • Step #13 Leave the croissants to soak like this for 15 mins.
  • Step #14 Carefully pour the mixture into a buttered baking tin & spread it out to ensure that the raisins are evenly distributed.
  • Step #15 Place the tin in the center of the oven & bake for 30 to 35 mins.
  • Step #16 To check that the pudding is done, insert a knife into the center.
  • Step #17 If when removing it is slightly wet then the pudding is ready as the centre should remain moist.
  • Step #18 Remove it from the oven & leave to cool down.
