Ingredients
1 tbsp baking powder .
1-2 tsp orange zest, grated .
2 tsps ground cinnamon .
2 c all-purpose flour (I use 1/2 whole wheat & 1/2 white) .
2 tbsps granulated sugar .
3/4 c confectioners' sugar .
1 c rolled oats (quick or old fashioned, uncooked) .
1 tsp vanilla extract .
3-4 tsps orange juice or milk .
1/4 c granulated sugar, plus .
1 egg, lightly beaten .
8 tbsps unsalted butter or margarine, chilled & cut into pieces .
Glaze .
1/4 tsp salt .
3/4 c milk .
1/2 c toasted sliced pecans
Directions
Step #1 Heat oven to 425°F.
Step #2 Spray a cookie sheet with cooking spray.
Step #3 In food processor/blender, oats, mix flour, 1/4 c granulated sugar, baking powder & salt; mix well.
Step #4 Cut butter into 5-6 pieces, add to food processor/blender, & pulse until butter is size of small peas--do not over pulse.
Step #5 Transfer dry mixture to larger bowl.
Step #6 In small bowl, mix milk, egg & vanilla; mix well.
Step #7 Add wet ingredients to dry ingredients all at once; stir with fork or rubber spatula until dry ingredients are moistened.
Step #8 In another small bowl, mix remaining 2 tbsps granulated sugar with the pecans & cinnamon; mix well.
Step #9 Sprinkle top evenly over dough in bowl; carefully stir batter to swirl in cinnamon mixture (Do not mix completely.
Step #10 ).
Step #11 Drop dough by 1/4 cfuls 2 inches apart on cookie sheet.
Step #12 Bake 11-15 mins or until golden brown.
Step #13 Remove to wire rack; cool 5 mins.
Step #14 ***.
Step #15 Glaze:.
Step #16 In small bowl, mix confectioners' sugar, grated orange zest & enough orange juice or milk for desired consistency; mix until smooth.
Step #17 Drizzle over top of warm scones.
Step #18 Serve warm.
Step #19 ***When I make these, I have 9 scones & it takes 18 mins to bake them in my oven.
