Creamy Mexicali Corn Recipe

Ingredients
  • 22 oz Mexican-style corn, drained .
  • 1 tsp honey .
  • 3 oz cream cheese, 1-inch cubes .
  • Topping .
  • Corn mixture .
  • 1/2 c sour cream .
  • 2 tsps butter .
  • 1/4 c monterey jack cheese, shredded .
  • 1/4 c green onions, sliced .
  • 2 tbsps butter .
  • 1/2 c breadcrumbs .
  • 4 1/2 oz green chilies, sliced & drained

Directions
  • Step #1 In large skillet, melt 2 tsps butter over med-heat/flame.
  • Step #2 Add onions; cook & stir 1 min or until tender.
  • Step #3 Add corn & chiles; cook 2-4 mins or until thoroughly heated.
  • Step #4 stirring every once in awhile.
  • Step #5 Stir in honey.
  • Step #6 Add sour cream & cream cheese; mix well.
  • Step #7 Cook 2 mins or until cream cheese is melted & sauce is bubbly, stirring every once in awhile.
  • Step #8 Remove from heat; keep warm.
  • Step #9 Meanwhile, in small skillet, melt 2 tbsps butter over med-heat/flame.
  • Step #10 Add bread crumbs; cook & stir until light golden brown.
  • Step #11 Spoon corn mixture into serving dish.
  • Step #12 Sprinkle top with bread crumbs & Monterey Jack Cheese.
