Pasta With Zucchini, Goats Cheese And Pine Nuts Recipe

Ingredients
  • 4 medium green zucchini, grated coarsely .
  • 150 ml cream .
  • 120 g goat cheese .
  • 2 tbsps toasted pine nuts .
  • 100 ml white wine .
  • 1 brown onion, sliced very finely .
  • 1/2 bunch basil leaves .
  • 3 garlic cloves, minced .
  • 500 g dry penne pasta

Directions
  • Step #1 Cook the pasta according to the manufacturers instructions.
  • Step #2 Time the cooking of your pasta so that it is ready at the same time as your sauce.
  • Step #3 Fry the onions, garlic & zucchini in a little olive oil over a high heat.
  • Step #4 Once the zucchini is softened & the garlic has begun to colour, add the wine, then the cream.
  • Step #5 Simmer for 30 seconds, then add the goats' cheese & pine nuts, then season this with salt & pepper.
  • Step #6 Toss in the pasta & basil leaves & serve this with grated parmesan.
