Louisiana Chicken And Sweet Potato Hash Recipe

Ingredients
  • 1/4 c finely sliced parsley .
  • 1 tbsp unsalted butter .
  • 1 large onion, finely sliced (1 1/2 to 2 c) .
  • fresh ground black pepper .
  • 3 scallions, white & tender green parts, finely sliced .
  • 1 medium green bell pepper, seeded, cored & finely sliced (1 1/4 c) .
  • 1 lb boneless skinless chicken breasts, cut into one inch pieces .
  • 2 tsps smoked paprika .
  • 1/2 c low-fat sour cream .
  • 1/4 c chicken broth .
  • 1 large garlic clove, finely minced .
  • 1 1/2 lbs sweet potatoes, scrubbed & cut into 1/2 inch cubes (2 to 3 medium) .

  • 1 tsp dried thyme

Directions
  • Step #1 Place the sweet potatoes In a large-ish pan with just enough water to cover.
  • Step #2 Bring to a boil over medium-high heat, then reduce the heat to medium-low.
  • Step #3 Cover up & cook about 10 mins, until the potatoes are just tender.
  • Step #4 Drain the potatoes, & set aside.
  • Step #5 While potatoes are cooking, heat skillet & place the butter in it to melt over med-heat/flame.
  • Step #6 Add the onion, bell pepper & garlic, stirring constantly, & cook for 3 mins, until the vegetables have softened.
  • Step #7 Add chicken pieces & saute until cooked through, approximately 15 mins.
  • Step #8 Add the paprika & the dried thyme, crumbling it between your fingers, then the salt & pepper to taste.
  • Step #9 Stir to mix for 1 min.
  • Step #10 Drain & add sweet potatoes, scallions, parsley, sour cream & chicken broth.
  • Step #11 Cook for 3-5 mins until the all flavors & liquids have mixed.
