Light Pumpkin Muffins Recipe

Ingredients
  • 1 large egg white .
  • 1 large egg .
  • 1 tsp baking soda .
  • 1/4 c vegetable oil .
  • 1 c canned pumpkin .
  • 1 c granulated sugar .
  • 1/2 tsp salt .
  • 1 tsp vanilla extract .
  • 1 tbsp baking powder .
  • 1 tbsp granulated sugar .
  • 1/3 c nonfat milk .
  • 1 tsp ground cinnamon .
  • 3/4 c nonfat sour cream .
  • 2 3/4 c all-purpose flour .
  • cooking spray .
  • 1 1/2 tsps brown sugar

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & next 5 ingredients (flour through salt) in a medium bowl, stirring with a whisk.
  • Step #4 Make a well in center of mixture.
  • Step #5 Combine pumpkin & next 6 ingredients (pumpkin through egg white); add to flour mixture, stirring just until moist.
  • Step #6 Spoon the batter into 18 muffin c coated with cooking spray.
  • Step #7 Combine 1 tbsp granulated sugar & brown sugar; sprinkle it over muffins.
  • Step #8 Bake at 375° for 25 mins or until muffins spring back when touched lightly in center.
  • Step #9 Remove muffins from pans as soon as possible; cool on a wire rack.
