Step #1 In a large pan fry the sliced onion in 2 tbsps of the oil until golden.
Step #2 Cut the peeled sweet potatoes into 2.
Step #3 5cm cubes & add to the pan with enough water to just cover.
Step #4 Add spices, a little salt & 2 more tbsps of oil.
Step #5 Cook until the potato pieces are tender, & the liquid reduced to a sauce, turning the potatoes over.
Step #6 Serve the salad at about room temp mixed with green olives to taste & the preserved lemon rind if wished.
Step #7 Sprinkle top with lemon juice & sliced parsley.
