Pizza Casserole Recipe

Ingredients
  • 2 lbs lean ground beef .
  • 1 (10 oz) jar pizza sauce (such as Ragu) .
  • 2 tbsps olive oil .
  • 1/4 lb sliced pepperoni .
  • 8 oz fresh white mushrooms .
  • 4 c mini penne pasta .
  • 4 c shredded mozzarella cheese .
  • 1 tbsp butter .
  • 3 garlic cloves, minced .
  • 1 medium yellow onion, finely sliced .
  • 1 green bell pepper, finely sliced .
  • 1 (16 oz) jar spaghetti sauce (such as Ragu Old World) .
  • 1 tsp salt

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cook penne pasta until just tender; drain well.
  • Step #3 Spray a deep 9X13 inch baking dish with non-stick cooking spray.
  • Step #4 Press penne pasta into the prepared baking dish & set aside to cool.
  • Step #5 In a large frying pan, cook onion, green bell pepper & garlic in olive oil until veggies are soft.
  • Step #6 Add ground beef & salt & cook this until beef is browned; drain if needed.
  • Step #7 Add spaghetti sauce & pizza sauce to the browned ground beef; mix well.
  • Step #8 Allow to simmer while you prepare the mushrooms.
  • Step #9 Wash & slice mushrooms.
  • Step #10 Saute mushrooms in butter until mushrooms are soft.
  • Step #11 Pour ground beef mixture over penne pasta.
  • Step #12 Top with sauteed mushrooms, shredded mozzarella cheese & pepperoni.
  • Step #13 Bake, uncovered, for about 30 mins or until cheese starts to brown slightly.
  • Step #14 Remove from oven & serve.
