Roasted Beets With A Rosemary Glaze Recipe

Ingredients
  • salt & pepper .
  • 1 tsp fresh rosemary, sliced or 1 pinch dried rosemary .
  • 2 tbsps brown sugar .
  • 1/4 c balsamic vinegar .
  • 1/2 c water .
  • 2 tsps olive oil .
  • Rosemary Glaze .
  • 1 kg beets, washed & trimmed (7 medium)

Directions
  • Step #1 Wrap beets in foil wrap in a single layer.
  • Step #2 Bake in 400F oven for 1 hr, or until tender.
  • Step #3 Cool beets slightly.
  • Step #4 Scrape off skins while beets are still warm.
  • Step #5 Cut into wedges.
  • Step #6 (can be made ahead of time to this point).
  • Step #7 Heat oil in large skillet on med high heat.
  • Step #8 Add beets & toss to coat with oil.
  • Step #9 Add vinegar & sugar.
  • Step #10 Bring to a boil.
  • Step #11 Add rosemary & water.
  • Step #12 cook for 8 - 10 mins, or until liquid evaporates & beets are well glazed.
  • Step #13 Spice up with salt & pepper.
  • Step #14 (can be made ahead of time to this point).
  • Step #15 Note: If made up in advance, heat the beets for 1/2 hr at 350.
