Apple Butter Muffins Recipe

Ingredients
  • 1 tsp baking soda .
  • 1 egg .
  • 1 1/2 tsps baking powder (aluminum-free if available) .
  • sugar, to sprinkle .
  • 1 3/4 c unbleached flour or all-purpose flour .
  • 2 tbsps lemon juice .
  • 1 (5 oz) can evaporated milk .
  • 1 c sugar .
  • 1 tsp vanilla .
  • 1/2 c butter, softened .
  • 1 c apple butter (homemade if available) .
  • 1/4 tsp salt

Directions
  • Step #1 In a small mixing bowl stir this together the flour, baking powder, baking soda & salt; set aside.
  • Step #2 In a large mixing bowl cream the butter & sugar until fluffy.
  • Step #3 Add the egg to the sugar mixture; beat well.
  • Step #4 Beat in the apple butter & vanilla.
  • Step #5 Stir lemon juice into the evaporated milk.
  • Step #6 Beating at lowish speed, alternately add the flour & the milk mixtures to the apple butter mixture until just mixd.
  • Step #7 The less you mix the more tender the crumb.
  • Step #8 Grease or line with baking papers, 24 muffin c.
  • Step #9 Fill each c 2/3 full.
  • Step #10 Sprinkle top lightly with sugar.
  • Step #11 Bake at 350F for 20-25 mins.
  • Step #12 Cool on wire racks.
