Philly Chinatown Oriental Ginger Cucumbers Recipe

Ingredients
  • 1/2 tsp hot chili flakes (optional) .
  • 1/2 c water .
  • marinade .
  • 1/4 c sugar .
  • 1 tbsp dark sesame oil .
  • 3-4 slices fresh ginger, slivered .
  • toasted sesame seeds, garnish .
  • 1/2 c white vinegar .
  • 3-4 unwaxed cucumbers, sliced .
  • 1 tbsp salt

Directions
  • Step #1 If the cukes are waxed? You gotta peel them.
  • Step #2 Go for unwaxed.
  • Step #3 Combine the salt & cucumbers & allow to sit for 1 hr.
  • Step #4 Rinse thoroughly under cold.
  • Step #5 water & pat dry.
  • Step #6 Place in a bowl.
  • Step #7 In a small saucepan, sugar, heat together the ginger, vinegar, water & oil.
  • Step #8 Bring to a boil, then pour over cucumbers.
  • Step #9 Marinate at least overnight.
  • Step #10 To serve, garnish with toasted sesame seeds.
  • Step #11 Variation Add 1/2-1 tsp of hot chili flakes to the marinade.
  • Step #12 Note? That is HOT chili flakes.
