Orange Blossom Rice Pudding Recipe

Ingredients
  • 3/4 c superfine sugar (caster) .
  • 1 c pudding rice (or similar short grain rice) .
  • 3 tbsps orange blossom water .
  • 2 1/2 c whole milk, plus a few tbsps extra for mixing .
  • 2 tbsps cornstarch .
  • ground cinnamon, for sprinkling

Directions
  • Step #1 Place the pudding rice In a large-ish non-stick saucepan.
  • Step #2 Pour in enough water to cover the rice one inch above the level of the rice.
  • Step #3 Bring to a boil & cook this until rice is tender.
  • Step #4 Add the milk & sugar.
  • Step #5 Return to a boil & then reduce the heat & let simmer.
  • Step #6 Mix together the cornstarch with a tbsp or two of milk to form a slightly runny paste.
  • Step #7 While stirring the rice, slowly add the cornstarch mixture.
  • Step #8 Mix in the orange blossom water & bring to a boil.
  • Step #9 Remove from heat & transfer the rice into a large glass serving bowl or 6 individual ramekins.
  • Step #10 Cool at about room temp & then put in the fridge for at least one hr.
  • Step #11 Dust with cinnamon before serving.
