Step #2 Put the chicken in a small bowl & toss with 2 tbsps of the lime juice, 1 tbsp of the cilantro, 1/2 c of the salsa, 1 tsp of the minced jalapeño, the minced onion, & salt & pepper to taste.
Step #3 Place a quarter of the chicken mixture on the lower third of one of the tortillas & roll it into a cylinder from the bottom up, tucking in the sides as you go, so that no chicken escapes from the ends.
Step #4 Place the filled tortilla in a square 8-by-8-inch baking dish with the seam facing down.
Step #5 Repeat with the remaining chicken & tortillas.
Step #6 Combine the remaining 1 c salsa with 1 tbsp water, the cilantro, the remaining lime juice, & the jalapeño.
Step #7 Arrange the slices of cheese over the tortillas & pour the salsa mixture over the top.
Step #8 Bake until the cheese is browned & melted, 15 to 20 mins.
