Neo-enchiladas Suizas Recipe

Ingredients
  • 3 tbsps sliced cilantro, plus extra for garnish .
  • 1/2 small red onion, minced .
  • 2 1/2 c shredded rotisserie cooked chicken (a little more than half a chicken) .
  • 4 slices asadero cheese or provolone cheese (about 4 oz) .
  • 1 jalapeno, minced (about 1 tbsp) .
  • 1 lime, juice of (about 3 tbsps) .
  • 1 1/2 c tomatillo salsa .
  • 4 flour tortillas

Directions
  • Step #1 Heat oven to 450°F.
  • Step #2 Put the chicken in a small bowl & toss with 2 tbsps of the lime juice, 1 tbsp of the cilantro, 1/2 c of the salsa, 1 tsp of the minced jalapeño, the minced onion, & salt & pepper to taste.
  • Step #3 Place a quarter of the chicken mixture on the lower third of one of the tortillas & roll it into a cylinder from the bottom up, tucking in the sides as you go, so that no chicken escapes from the ends.
  • Step #4 Place the filled tortilla in a square 8-by-8-inch baking dish with the seam facing down.
  • Step #5 Repeat with the remaining chicken & tortillas.
  • Step #6 Combine the remaining 1 c salsa with 1 tbsp water, the cilantro, the remaining lime juice, & the jalapeño.
  • Step #7 Arrange the slices of cheese over the tortillas & pour the salsa mixture over the top.
  • Step #8 Bake until the cheese is browned & melted, 15 to 20 mins.
  • Step #9 Sprinkle top with cilantro & serve.
