Bacon And Maple Grits Puff Recipe

Ingredients
  • 8 slices bacon .
  • 2 c milk .
  • 1/2 c real maple syrup .
  • 1/2 tsp salt .
  • 4 eggs .
  • 1 c quick-cooking grits .
  • 1 1/4 c water

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Grease 1 1/2 quart round casserole or souffle dish.
  • Step #3 Cook bacon in large skillet over med-heat/flame; about 7 mins.
  • Step #4 Remove bacon to paper towel; set aside.
  • Step #5 Reserve 2 tbsps bacon drippings.
  • Step #6 Combine milk through salt in medium sauce pan.
  • Step #7 Bring to a boil over med-heat/flame, stirring frequently.
  • Step #8 Simmer 2-3 mins or until mixture thickens; stirring constantly.
  • Step #9 Remove from heat & stir in the syrup & reserved bacon drippings.
  • Step #10 Crumble bacon & add to grits mixture.
  • Step #11 Beat eggs in medium bowl.
  • Step #12 Gradually stir small amount of grits mixture into eggs, then stir back ito remaining grits mixture.
  • Step #13 Pour into prepared casserole.
  • Step #14 Bake 1 hr & 20 mins.
  • Step #15 Serve as soon as possible with extra maple syrup & fruit.
  • Step #16 Note: Puff will fall slightly after removing from oven.
