Zucchini Harvest Bread Recipe

Ingredients
  • 2 c zucchini, unpeeled & shredded .
  • 1 tsp salt .
  • 1 tbsp cinnamon .
  • 1/4 tsp nutmeg .
  • 1 tsp baking soda .
  • 3 c all-purpose flour .
  • 3/4 c egg substitute .
  • 1/4 tsp cloves .
  • 1 tbsp vanilla .
  • 1 1/2 c sugar .
  • 1/2 c brown sugar, firmly packed .
  • 3/4 c butter, softened .
  • 1/4 tsp baking powder .
  • 1/2 c walnuts, sliced & toasted

Directions
  • Step #1 Heat oven to 350 degrees F.
  • Step #2 In a large mixer bowl, mix all ingredients except zucchini & walnuts.
  • Step #3 Beat at lowish speed, scraping bowl often, until well mixed.
  • Step #4 By hand, stir in the zucchini & walnuts.
  • Step #5 Spread into 2 greased 8 by 4 inch loaf pans.
  • Step #6 Bake for 50 to 65 mins or until wooden pick inserted in center comes out clean.
  • Step #7 Cool for 10 mins.
  • Step #8 Remove from pans.
  • Step #9 Cool completely.
  • Step #10 Store put in the fridged.
