Blueberry Green Tea Cake Recipe

Ingredients
  • 1/3 c milk .
  • 2 1/2 tbsps granulated sugar .
  • 1 tsp green tea powder (maccha) .
  • Frosting .
  • 1 c wild blueberries .
  • 2 tbsps ground almonds .
  • 1 tbsp maple syrup .
  • 1/2 tsp baking powder .
  • 3/4 c sugar (or to taste) .
  • Cake .
  • 1/2 c cake flour .
  • 1/2 tsp baking soda .
  • 1 c whipping cream .
  • 2 tbsps oil .
  • 2 tbsps bread flour

Directions
  • Step #1 Preheat the oven to 350°F Grease one 9x9 baking pan.
  • Step #2 Put first 4 ingredients into a small pot & heat under low heat until all the sugar melts.
  • Step #3 Then pour this mixture into a bowl.
  • Step #4 Sift dry ingredients & add them to the sugar mixture.
  • Step #5 Blend with an eggbeater until mix well.
  • Step #6 Pour the batter into the pan & smooth the surface.
  • Step #7 Bake in the preheated oven for 10-15 mins.
  • Step #8 Take the cake out of the oven & let it cool.
  • Step #9 After it cools completely, remove it from the pan & cut it horizontally into 3 even layers.
  • Step #10 (Different kinds of ovens produce different degrees of heat, so please adjust the baking time accordingly to avoid over baking.
  • Step #11 ).
  • Step #12 Whip the whipping cream & the sugar until fluffy.
  • Step #13 Keep a portion for decorating the top of the cake & mix the rest with the blueberries.
  • Step #14 Spread the blueberry whipped cream mixture on the cake layers as fillings in the middle.
  • Step #15 Decorate the top of the cake with the other portion of whipped cream & a handful of blueberries.
