Olive Tapenade Recipe

Ingredients
  • 3 tbsps capers, rinsed & sliced fine .
  • 3 garlic cloves, sliced fine .
  • sea salt .
  • 1 lemon, zest of .
  • 2 tbsps anchovy fillets, sliced fine .
  • 1 1/2 c kalamata olives, sliced fine .
  • 1/2 c extra virgin olive oil .
  • 1 tbsp Italian parsley, sliced .
  • 1/2 tsp fresh ground black pepper

Directions
  • Step #1 Combine all ingredients & season this with salt & pepper at the end.
  • Step #2 Since you have salty anchovies & olives, be careful of the amount of salt you use.
  • Step #3 This recipe can be done completely in the food processor/blender, although both Bruce & I prefer the clean cut of a hand chop.
  • Step #4 If you use the processor, mix all the ingredients except the olive oil until they are finely sliced.
  • Step #5 Then with it running, add the olive oil slowly to the sliced mixture until it has been absorbed.
