Non-dairy (pareve) Cheesecake Recipe

Ingredients
  • 1 tsp vanilla .
  • 3/4 c sugar .
  • 1 (12 oz) container tofutti sour cream (non-dairy) .
  • 2 eggs, beaten .
  • 1 graham cracker pie crust .
  • 1 tbsp lemon juice .
  • 2 (16 oz) containers soy cream cheese (Toffuti brand)

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Put everything in a saucepan & cook over low heat/flame, stirring constantly, for 5 mins.
  • Step #3 Will get thick & gloppy.
  • Step #4 Pour into graham cracker crust & bake for half an hr.
  • Step #5 Can top this with swirls of non-dairy chocolate syrup, cherry pie filling, or a topping of your choice.
