Steamed Mussels With Garlic (liv Rockefeller) Recipe

Ingredients
  • 1 1/2 c dry white wine .
  • 1 medium onion, minced .
  • 4 garlic cloves, minced .
  • 1 c water .
  • 6 lbs mussels, scrubbed, debearded .
  • 1/4 tsp crushed red pepper flakes .
  • 4 tbsps unsalted butter

Directions
  • Step #1 Melt the butter In a large-ish, heavy saucepan.
  • Step #2 Add the onion & cook over moderate heat, until just softened, stirring, about 2 mins.
  • Step #3 Add the garlic & crushed red pepper flakes & cook this until fragrant, about 1 min.
  • Step #4 Add wine & bring to a boil.
  • Step #5 Add the mussels & about a c of water.
  • Step #6 Cover up & cook over high heat, until the mussels open, stirring every once in awhile, 8-10 mins.
  • Step #7 Discard any mussels that don't open.
  • Step #8 Spoon the mussels & broth into bowls & serve.
