Aubergine (eggplant) Curry Recipe

Ingredients
  • 1/2 tsp mustard powder .
  • 1/2 tsp ground ginger .
  • 5 fluid oz milk .
  • 12 oz tomatoes, peeled & sliced .
  • 4 oz creamed coconut .
  • 1/4 tsp salt .
  • 1 tbsp lemon juice .
  • 1 tbsp oil .
  • 1 tsp turmeric .
  • 1/4 tsp cayenne pepper .
  • 1 large onion, sliced .
  • 1 lb aubergines, cut into 1-inch strips .
  • 2 garlic cloves, sliced .
  • 1 green pepper, cut into strips

Directions
  • Step #1 Heat the oil in a pan & fry the aubergine strips till light brown in colour & remove this from the pan.
  • Step #2 Add the onion, garlic, ginger & green pepper to the pan & fry for 3 mins stirring all the time.
  • Step #3 Now add the coconut cream, lemon juice, turmeric & mustard powder; stir.
  • Step #4 Add the cooked aubergines, cayenne pepper & the milk, salt, tomatoes, bring to the boil, reduce heat & cook for 10 mins.
