Mushroom And Tofu Stir-fry Recipe

Ingredients
  • 1 tsp garam masala powder .
  • 1 tsp ginger-garlic paste .
  • To garnish .
  • salt .
  • 2 c mushrooms, sliced .
  • 1/4 c onions, thinly sliced .
  • 1 tbsp oil .
  • 1/2 tsp red chili powder .
  • 1/4 c yellow bell peppers or red bell peppers, thinly sliced .
  • 1 c tofu or cottage cheese, cubes .
  • 1/4 c spring onions, cut into small lengths (only greens) .
  • 1/4 tsp turmeric powder .
  • 3 tomatoes, cut into flowers .
  • 1/4 tsp black pepper .
  • 1/4 c unsalted cashews, roasted

Directions
  • Step #1 Roast tofu cubes in a non-stick pan by adding a few drops of oil & a pinch of red chilli powder.
  • Step #2 Stir carefully & do not break the cubes.
  • Step #3 Keep aside.
  • Step #4 In the same pan, add the remaining oil.
  • Step #5 Fold in mushrooms, ginger-garlic paste & all the masala powders alongwith salt.
  • Step #6 Stir-fry for a few mins till the mixture dried.
  • Step #7 Note: Dont cook on slow flame cause this cause mushrooms to become mushy & overcooked.
  • Step #8 Add roasted tofu cubes/cottage cheese cubes & roasted cashews.
  • Step #9 Mix well.
  • Step #10 Take a wide dish & transfer the mushroom tofu stir-fry in it.
  • Step #11 Garnish & serve.
