Chicken Pot Pie Recipe

Ingredients
  • 1 (8 oz) package mushrooms, sliced (optional) .
  • 1 tsp salt .
  • 1/2 tsp pepper .
  • 10 oz peas & carrots, thawed .
  • 1 c zucchini, sliced thin .
  • 4 deep dish pie shells, thawed .
  • 2 tsps italian seasoning (or a combo of basil, oregano, garlic, sage & maybe thyme) .
  • 1 small onion, sliced .
  • 3 c chicken broth .
  • 1 (12 oz) package bacon, cooked & crumbled .
  • parmesan cheese (optional) .
  • 1 c milk .
  • 2/3 c butter .
  • 2 c grated cheddar cheese .
  • 2/3 c flour .
  • 3-4 c cooked chicken, sliced

Directions
  • Step #1 Melt butter over low heat/flame & add the flour.
  • Step #2 Cook & stir briefly & mix in the sliced onion, salt & pepper.
  • Step #3 Cook until bubbly.
  • Step #4 Stir in the chicken broth & milk.
  • Step #5 Continue stirring constantly until the sauce is of medium texture (about 2-3 mins).
  • Step #6 Stir in the chicken, bacon, vegetables & Italian Spice uping.
  • Step #7 Pour in the bottom of two pie crusts & top this with cheeses.
  • Step #8 Place the top crusts over the top.
  • Step #9 Pinch the sides & slit the tops.
  • Step #10 Bake at 425F degrees for 30-35 mins.
  • Step #11 Cool 5 mins before serving.
