Cranberry Orange Loaf Recipe

Ingredients
  • 1 c white sugar
  • 1 tbsp grated orange zest
  • 1/2 c pecans, coarsely sliced
  • 1/2 tsp baking soda
  • 1/4 c margarine, softened
  • 1/2 tsp salt
  • 1 1/2 tsps baking powder
  • 1 1/2 c fresh cranberries
  • 1 egg
  • 3/4 c orange juice
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9x5 inch loaf pan.
  • Step #3 Whisk together flour, baking soda, baking powder, & salt.
  • Step #4 Stir in orange zest, cranberries, & pecans.
  • Step #5 Set aside.
  • Step #6 In a large bowl, cream together margarine, sugar, & egg until smooth.
  • Step #7 Stir in orange juice.
  • Step #8 Beat in flour mixture until just moistened.
  • Step #9 Pour into prepared pan.
  • Step #10 Bake for 1 hr in the preheated oven, or until the bread springs back when lightly touched.
  • Step #11 Let stand 10 mins, then turn out onto a wire rack to cool.
  • Step #12 Wrap in plastic when completely cool.
