Healthy Pumpkin Pie Bran Muffins Recipe

Ingredients
  • 1 tbsp baking powder .
  • 1 egg, beaten .
  • 1 1/2 c whole wheat flour .
  • 1 c nonfat milk (skim) .
  • 1 3/4 tsps pumpkin pie spice .
  • 1/4 c granulated sugar .
  • 1 1/2 c canned pumpkin .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • 1 c all-bran cereal .
  • 1 tbsp vanilla extract

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 Coat nonstick 12 c muffin pan with nonstick cooking spray.
  • Step #3 Option: Combine 2 tbsps of sugar & 1 tsp of cinnamon in a small bowl for topping & set aside.
  • Step #4 Blend cereal & milk in large bowl; set aside for 5 mins to soften.
  • Step #5 Meanwhile, sugar, baking soda, mix flour, baking powder, & salt In a large-ish bowl; Mix well.
  • Step #6 Whisk pumpkin, egg, pumpkin pie spice & vanilla into softened cereal.
  • Step #7 Gently fold into flour mixture just until mixed.
  • Step #8 Do not over mix.
  • Step #9 Spoon 1/3 c equal amounts of batter into each muffin c; sprinkle evenly with pecan chips & reserved cinnamon sugar topping.
  • Step #10 Bake 20 to 25 mins.
  • Step #11 Cool on wire rack 3 mins before removing muffins from pan.
  • Step #12 Serve warm or at about room temp.
  • Step #13 Don't stir muffin batter too much -- over mixing will make the muffins tough.
  • Step #14 There should be lumps in the batter; these will disappear during baking.
  • Step #15 Makes 12 muffins.
