Pork Chops With Roasted Tri-color Potatoes And Figs Recipe

Ingredients
  • 2 center-cut pork chops (1 inch think) .
  • pepper .
  • 1 tbsp prepared Dijon mustard .
  • 1 tbsp olive oil .
  • 1 onion, sliced (small to med) .
  • salt .
  • 1 lb potatoes, cubed (Medley of Yellow, Red & Blue) .
  • rosemary .
  • 1/2 c white wine .
  • 3 whole garlic cloves, peeled .
  • 6 dried black figs, quartered

Directions
  • Step #1 Trim a small bit fat from your chops & bring to a med-high heat in your skillet, & skillet is good, until some of the fat is rendered, greasy & hot.
  • Step #2 Spread Prepared Dijon Mustard on one side of chops.
  • Step #3 Place mustard-side down & sear for 6 mins.
  • Step #4 Spread remaining Prepared Dijon Mustard on up-facing side of chops, flip, & sear for 6 more mins.
  • Step #5 Remove chops to plate & set aside.
  • Step #6 Add Olive Oil & sauté Potato Medley, Onion & Garlic for 5 mins.
  • Step #7 Salt & Pepper.
  • Step #8 Add White Wine & allow to de-glaze for about half a min.
  • Step #9 Add Figs & and just a bit of Rosemary, & more Salt & Pepper if desired.
  • Step #10 Return Pork Chops & any drippings to pan.
  • Step #11 Place in a preheated 375 degree oven for 15 mins, or until Pork Chops are cooked, Potatoes are tender & onions are caramelized.
  • Step #12 Pork chops may be removed from pan & kept warm if Potatoes need further cooking.
  • Step #13 Serve with Steamed Broccoli or other veg.
