Ingredients
  • 1/4 tsp dried thyme .
  • cooking spray .
  • 1 lb packaged peppercorn boneless beef sirloin, trimmed (Hormel) .
  • 1/3 c thinly sliced bottled roasted red peppers .
  • 1/8 tsp fresh ground black pepper .
  • 1 tbsp tomato paste .
  • 1/3 c reduced-sodium fat-free chicken broth

Directions
  • Step #1 Combine first 4 ingredients in a small bowl; stir with a whisk.
  • Step #2 Remove beef from package & cut beef crosswise into 8 slcies.
  • Step #3 Place beef slices between 2 sheets of heavy-duty plastic wrap; lb to 1/2-inch thickness, using a meat mallet or small skillet.
  • Step #4 Coat beef with cooking spray.
  • Step #5 Place a non-stick skillet over medium-high heat.
  • Step #6 Add beef; cook 2 mins on each side or until desired degree of doneness.
  • Step #7 Remove from pan & place on serving plates.
  • Step #8 Add bell pepper slices & broth mixture to pan.
  • Step #9 Bring to a boil.
  • Step #10 Boil 2 to 3 mins or until slightly thick, stirring constantly.
  • Step #11 Spoon over fillets.
