Squash And Carrot Melt Recipe

Ingredients
  • 6 sliced yellow squash .
  • 1/2 c breadcrumbs .
  • 8 medium carrots (peeled & sliced) .
  • 1/2 onion (sliced) .
  • 1/3 c milk .
  • 2 beaten eggs .
  • 1/4 c margarine or butter .
  • salt & pepper .
  • 4 garlic cloves (finely sliced) .
  • 8 oz cheddar cheese (cubed)

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Combine sliced carrots, squash, & onion in large greased casserole pan.
  • Step #3 Stir in beated eggs until well mixed.
  • Step #4 Add remaining ingedients until evenly mixed together.
  • Step #5 Bake for 45 mins covered, 15 mins uncovered or until vegetables are tender.
