South Shore Lilikoi Meringue Tartelette Recipe

Ingredients
  • 4 oz sugar .
  • 1/2 tsp vanilla extract .
  • 3 1/2 oz sugar .
  • eggs .
  • For Meringue .
  • 3 1/2 oz butter .
  • For Sugar Tartelette .
  • eggs .
  • 3 egg whites .
  • 5 oz sugar .
  • 1/2 c lilikoi passion fruit puree .
  • 3 oz butter .
  • 7 oz all-purpose flour .
  • 2 tbsps water

Directions
  • Step #1 For the Tartelette:.
  • Step #2 Make the sugar dough a day before.
  • Step #3 Beat the butter, the 3.
  • Step #4 5 oz of sugar & 1/2 tsp of vanilla.
  • Step #5 Add one egg & 7 oz of flour.
  • Step #6 Do not over mix the dough.
  • Step #7 Rest in refrigerator for at least one hr.
  • Step #8 Roll the dough, cut & form the tartelette.
  • Step #9 Bake at 330 degrees until light golden color.
  • Step #10 Bring to a boil the 3 oz of butter, 4 oz of sugar & passion fruit (lilikoi) puree.
  • Step #11 In bain marie (hot water bath or double boiler), add the 2 eggs & stir until the mixture boils again.
  • Step #12 Pour the hot filling into the tartelette & set aside to cool.
  • Step #13 The meringue:.
  • Step #14 Combine the 2 tbsps of water & 5 oz of sugar into a pan & bring to a boil.
  • Step #15 Whisk the egg white firm & pour over the hot syrup.
  • Step #16 Let it rest for a few mins to cool.
  • Step #17 Pipe the meringue all over the tarte & touch lightly.
  • Step #18 Decorate with berries & mango sauce.
