Pea And Feta Frittata Recipe

Ingredients
  • 1/4 c tarragon, sliced .
  • 3 eggs, lightly beaten .
  • 1 tbsp olive oil .
  • 1 c frozen peas .
  • 1 onion, sliced .
  • 4 oz feta, cut into cubes

Directions
  • Step #1 Cook the peas in simmering water for 3 mins, or until tender, drain.
  • Step #2 Fry the onion in olive oil in a small frying pan until tender, season.
  • Step #3 Add the peas, feta & tarragon & quickly pour the beaten eggs over.
  • Step #4 Cook for a couple of mins until the underside is set & browning.
  • Step #5 Pop under the broiler (grill) until the top is set.
