Microwave Plum Lamb Chops For 2 Recipe

Ingredients
  • 1/2 tsp mixed herbs .
  • 1 tbsp flour .
  • 1 tsp worcestershire sauce .
  • 1/2 c stock (from a stock cube is fine) .
  • 1 tbsp tomato sauce .
  • 1/4 c plum jam .
  • 1/4 c celery (sliced) .
  • 4 shoulder lamb chops (500grams approx trim excess fat) .
  • 1 small carrot (thinly sliced) .
  • 1 small onion (sliced) .
  • 1 tbsp oil

Directions
  • Step #1 Place flour, herbs & chops in a freezer bag & shake until lamb chops are coated with the seasoned flour.
  • Step #2 In a casserole dish - place oil, onion, celery & carrot & mix to coat.
  • Step #3 Microwave for 3 mins on HIGH.
  • Step #4 Remove chops from freezer bag & place on top of the vegetable mix.
  • Step #5 In a separate bowl, mix together the jam , sauces, & stock.
  • Step #6 Pour over the chops.
  • Step #7 Cover up & cook on MEDIUM for 10 mins turning chops after the 1st 5 mins.
  • Step #8 (power level 6 on my microwave).
  • Step #9 Then reduce to DEFROST & cook for 25 mins.
  • Step #10 Allow to stand for 5 Minutes.
  • Step #11 Serve with mixed veg.
