Spicy Indonesian Pork Satay (or Chicken) Recipe

Ingredients
  • 1/3 c low sodium soy sauce .
  • 1 tsp dried red pepper flakes or Tabasco sauce, to taste .
  • 1 tbsp sliced fresh ginger .
  • 1/4 tsp black pepper .
  • wooden skewers (soaked in water for 30 mins before grilling) .
  • 3/4 c smooth peanut butter or 1 c unsalted dry roasted peanuts .
  • 2 tbsps lemon juice .
  • 1 1/2 lbs pork tenderloins (cut into 1-1/2-inch cubes or desired size) .
  • 1/2 c chicken broth .
  • 2 1/2 tbsps liquid honey .
  • 1 tsp crushed coriander seeds (can use up to 2 tsps) .
  • 2 fresh garlic cloves .
  • 1 green onion, sliced (about 1/2 c) .
  • 1/3 c melted butter (slightly cooled)

Directions
  • Step #1 One day ahead; in a food processor/blender process garlic cloves, lemon juice, peanut butter, ginger, honey, soy sauce, coriander seed, green onion, dried red pepper flakes & black pepper until almost smooth.
  • Step #2 Add in chicken broth & butter; process until mixed (about 6 seconds).
  • Step #3 Place the pork cubes In a large-ish glass bowl, then pour the marinade on top; toss with a spoon to coat pork with marinade.
  • Step #4 Cover up & put in the fridge for 8-24 hrs, tossing a few times during chilling time (this can also be done In a large-ish resealable plastic bag).
  • Step #5 Set grill to medium heat.
  • Step #6 Remove the pork from the bowl (do not discard marinade).
  • Step #7 Thread the pork cubes onto skewers.
  • Step #8 Place the marinade into a small saucepan & boil for 5 mins.
  • Step #9 Grill the skewers for 10-15 mins or until browned, basting with the cooked marinade frequently with cooking.
  • Step #10 Serve with desired dipping sauce & cooked rice.
