Southwest White Chili Recipe

Ingredients
  • 4 oz sliced green chilies (1 small can) .
  • 1 tsp garlic powder .
  • grated cheese (optional) .
  • 1/2 tsp oregano .
  • 19 oz white cannellini beans, drained & rinsed (1 can) .
  • 1/4 tsp cayenne pepper .
  • 1 lb boneless skinless chicken breasts, cut into 1/2 inch cubes .
  • sliced scallions (optional) .
  • 1/4 c fresh cilantro, sliced (optional) .
  • 1 tsp ground cumin .
  • 1 c chicken broth (or more, as needed) .
  • 1 onion, coarsely sliced .
  • 2 tbsps olive oil, divided

Directions
  • Step #1 Mix spices in a small bowl.
  • Step #2 Heat 1 tbsp olive oil in a 3 quart pan.
  • Step #3 Add chicken cubes & cook 4 to 5 mins, stirring, until no longer pink.
  • Step #4 Remove chicken & juices to a bowl & set aside.
  • Step #5 Add the rest of the olive oil to the pan & saute onions until soft, 3 to 5 mins.
  • Step #6 Stir in chicken broth, chilies & spices.
  • Step #7 Simmer 10 mins.
  • Step #8 Stir in chicken & beans.
  • Step #9 Simmer uncovered for 10 mins.
  • Step #10 If desired, stir in the fresh cilantro & garnish with cheese & scallions.
