Ingredients
1/4 tsp white pepper .
3/4 c grated parmesan cheese .
1 put in the fridged pie crust .
1 tbsp truffle oil .
1 pinch ground nutmeg .
1 small head cauliflower, cored, cut into 1-inch florets (about 1 lb) .
1 tbsp Dijon mustard .
8 oz mascarpone cheese .
2 large onions, halved lengthwise, thinly sliced .
1/2 c whipping cream .
2 1/2 tbsps olive oil, divided .
2 large eggs .
1 c grated gruyere cheese
Directions
Step #1 Position rack in center of oven; preheat to 425°F Toss cauliflower with 1 tbsp olive oil in large bowl.
Step #2 Spread on large rimmed baking sheet, spacing apart.
Step #3 Sprinkle top with salt & pepper.
Step #4 Roast 15 mins; turn florets over.
Step #5 Continue roasting until tender, about 25 mins longer.
Step #6 Cool cauliflower, then thinly slice.
Step #7 Drizzle with truffle oil; toss.
Step #8 Reduce oven temperature to 350°F.
Step #9 Press pie crust onto bottom & up sides of 9-inch-diameter tart pan with removable bottom.
Step #10 Line pie crust with foil wrap; fill with pie weights.
Step #11 Bake crust 20 mins.
Step #12 Remove foil wrap & pie weights; bake this until crust is golden, about 5 mins, pressing crust with back of fork if bubbles form.
Step #13 Cool crust.
Step #14 Maintain oven temperature.
Step #15 Heat remaining 1 1/2 tbsps olive oil in heavy large skillet over med-heat/flame.
Step #16 Add onion; sprinkle with salt & pepper.
Step #17 Cook until onion is deep golden brown, stirring every once in awhile, about 40 mins.
Step #18 Cool slightly.
Step #19 DO AHEAD Can be made 1 day ahead.
Step #20 Store crust at about room temp.
Step #21 Cover up & chill cauliflower & onion separately.
Step #22 Brush bottom & sides of crust with mustard.
Step #23 Spread onion in crust.
Step #24 Arrange cauliflower evenly over.
Step #25 Set tart on rimmed baking sheet.
Step #26 Whisk eggs & next 4 ingredients in medium bowl.
Step #27 Stir in Gruyere.
Step #28 Pour mixture over filling in tart pan; sprinkle with Parmesan.
Step #29 Bake until tart is golden & center is set, about 40 mins.
Step #30 Transfer to rack; cool 15 mins before serving.
