Asian Coconut-milk Shrimp Recipe

Ingredients
  • 1/4 c unsalted dry roasted peanuts, finely sliced .
  • 3/4 c unsweetened coconut milk .
  • 1 shallot, finely sliced .
  • 1 small jalapeno, seeded & finely sliced .
  • 1/2 tsp sugar .
  • 1 1/2 tsps lime zest .
  • salt .
  • 1 1/2 lbs medium shrimp, shelled & deveined .
  • 2 tbsps fresh cilantro, finely sliced .
  • 1 1/2 tsps canola oil

Directions
  • Step #1 In a large skillet, heat the canola oil.
  • Step #2 When it begins to shimmer, add the sliced shallot & cook over moderate heat until softened, about 1 min.
  • Step #3 Stir in the jalapeno & lime zest, then pour in the coconut milk.
  • Step #4 Add the sugar & season generously with salt & bring to a simmer.
  • Step #5 Add the shrimp & cook.
  • Step #6 stirring frequently, until opaque, about 5 mins.
  • Step #7 Stir in the sliced cilantro.
  • Step #8 Spoon the shrimp & the sauce over steamed rice.
  • Step #9 Sprinkle top with the peanuts & serve.
