British Scones (makeover - Light) Recipe

Ingredients
  • 1/2 tsp vanilla extract .
  • 1/3 c buttermilk .
  • 2 tbsps canola oil .
  • 1 egg, lightly beaten .
  • 1/2 tsp salt .
  • 2 tbsps brown sugar .
  • 3 tbsps cold butter .
  • 1 tsp sugar .
  • 1 1/2 tsps baking powder .
  • 1 c cake flour .
  • 1/4 tsp baking soda .
  • 1 1/4 c all-purpose flour

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 In a large bowl, brown sugar, mix the flours, baking powder, baking soda & salt.
  • Step #3 Cut in butter until mixture resembles coarse crumbs.
  • Step #4 Combine the egg, buttermilk, oil & vanilla.
  • Step #5 Add to crumb mixture & stir until a soft dough forms.
  • Step #6 Turn onto a floured surface & knead carefully 6-8 times.
  • Step #7 Pat dough into a 6-inch circle & cut into eight wedges.
  • Step #8 Separate wedges & place 1 inch apart on an ungreased baking sheet.
  • Step #9 Brush tops with milk; sprinkle with sugar.
  • Step #10 Bake for 12-14 mins or until lightly browned.
  • Step #11 Remove to wire rack & serve warm.
