Country Corn Chowder Recipe

Ingredients
  • 1 tbsp butter .
  • 2 c chicken broth .
  • 1/2 tsp salt (optional) .
  • 1 c milk .
  • 1 medium yellow onion, sliced .
  • sliced chives .
  • 3 medium russet potatoes, peeled & cut into 1/2 inch cubes (about 1 lb) .
  • 1/4 tsp ground black pepper .
  • 1 c corn (fresh, frozen or well-drained canned)

Directions
  • Step #1 Melt butter In a large-ish saucepan over medium-high heat.
  • Step #2 Add onion & cook, stirring frequently, until golden & tender, about 7-10 mins.
  • Step #3 Add potatoes & chicken broth.
  • Step #4 Bring mixture to a boil.
  • Step #5 Reduce heat to low & let simmer, partially covered, until potatoes are tender, about 15-20 mins.
  • Step #6 Stir in corn, milk, salt & pepper; simmer uncovered 5 mins.
  • Step #7 Ladle chowder into bowls.
  • Step #8 Sprinkle top with sliced chives.
