Italian Chicken Salad In Lettuce Cups Recipe

Ingredients
  • 1/4 c lemon juice .
  • 4 oz fresh parmesan cheese, shaved with vegetable peeler .
  • 1 1/2 c red wine vinegar & oil salad dressing .
  • 2 c roasted red & yellow bell peppers, drained, patted dry, & coarsely sliced .
  • salt & freshly ground black pepper .
  • 1 1/4 c paper-thin slices red onions .
  • 24 butter lettuce leaves (from about 3 large heads) .
  • 2 tsps honey .
  • 1/2 c red wine vinegar .
  • 1/2 c drained capers .
  • 1 c olive oil .
  • 3/4 c sliced fresh Italian parsley .
  • fresh ground black pepper .
  • 3/4 c slivered almonds, toasted .
  • 2 tsps salt .
  • 10 c coarsely shredded cooked chicken (from about 3 purchased roasted whole chickens)

Directions
  • Step #1 Toss the chicken, parsley, onion, bell peppers, almonds, & capers In a large-ish bowl with enough vinaigrette to moisten.
  • Step #2 Spice up the chicken salad with salt & pepper, to taste.
  • Step #3 Arrange 1 large lettuce c & 1 small lettuce c on each plate, overlapping slightly.
  • Step #4 Spoon the chicken salad into the lettuce c.
  • Step #5 Drizzle more vinaigrette over the salads.
  • Step #6 Sprinkle top with the Parmesan & serve.
  • Step #7 Do-Ahead Tip: The chicken salad can be prepared 4 hrs ahead & put in the fridged.
  • Step #8 Just before serving, spoon the salad into the lettuce c.
  • Step #9 Red Wine Vinaigrette: Combine the vinegar, salt, honey, lemon juice, & pepper in a mixer.
  • Step #10 With the machine running, slowly add the oil & mix until emulsified.
  • Step #11 Yield: 1 3/4 c.
