Vieques Marinade Recipe

Ingredients
  • 1 tsp black peppercorns .
  • 4 garlic cloves, sliced .
  • 1/2 c soy sauce .
  • 1 tsp celery seeds .
  • 1 lime, peeled, seeded & sliced .
  • 2 tsps cumin .
  • 1 tsp ground coriander .
  • 1 tsp thyme .
  • 1/2 yellow onion, sliced .
  • 1 tsp oregano .
  • 1 c olive oil .
  • 2 tbsps sliced fresh ginger

Directions
  • Step #1 Place all ingredients in a mixer & mix until all spices are ground & sauce is smooth.
  • Step #2 Marinating recommendations: fin fish & shrimp - 1 hr, chicken & pork - 3 to 4 hrs, beef - 6 to 8 hrs or overnight if possible.
  • Step #3 After marinating the meat, save the marinade & bring it to a boil in a saucepan over high heat.
  • Step #4 Boil for 1 min, then reduce to a simmer.
  • Step #5 Simmer over low heat/flame for 10 mins, or until it is the consistency of a thin sauce.
  • Step #6 Serve with the meat.
