Raw Double C Salad
Ingredients
1 1/2 tsps turmeric .
3/4 c water .
2 medium carrots, sliced .
sliced bananas (optional) .
2 medium tomatoes, sliced .
3 tbsps vegetable oil .
1-1 1/2 tsp cinnamon .
raisins (optional) .
3/4 tsp cayenne .
2 tsps ground coriander .
3/4 tsp fennel seeds .
3/4 tsp black mustard seeds .
3 c sweet potatoes, cubed .
plain soy yogurt (optional) or dairy yogurt (optional) .
Optional sides .
2 c frozen green peas, sliced or 2 medium green peppers, sliced .
3/4 tsp ground cumin .
2-3 tsps fresh gingerroot, grated .
cashews (optional) or slivered almonds, lightly toasted (optional) .
5-6 medium garlic cloves, minced .
1/2-1 tsp salt (I use sea salt) .
3/4 tsp cardamom .
2 c onions, sliced (can omit if you don't like) (optional) .
1 medium head cauliflower, cut into florets
Directions
Step #1 Soften the onion,if using in a little water in a small pot.
Step #2 Set aside.
Step #3 In a seperate, large pot, begin steaming the sweet potatoes.
Step #4 After about 5-10 mins add the carrots; in 5 more mins add the cauliflower.
Step #5 Steam for 5 mins more.
Step #6 (They don't need to be cooked yet, just basically warmed.
Step #7 ).
Step #8 Meanwhile, heat the oil over medium in a small frying pan;add the mustard seeds & saute till they begin to pop.
Step #9 Add the remaining spices & cook on LOW heat for a min or two, be very careful not to burn them.
Step #10 Remove from heat.
Step #11 Remove the steamer basket from the veggies, add the softened onion & stir in the the spice mixture.
Step #12 Add water.
Step #13 Bring to a gentle simmer & cook, stirring every once in awhile, for 20 mins.
Step #14 When sweet potatoes are tender but not totally cooked, add the tomatoes & peas/peppers (a combo works fine).
Step #15 Simmer for another 15 mins.
Step #16 Serve over your favorite basmati rice, with the garnishes for a more Indian-style meal.
