Sesame Coconut Cookies Recipe

Ingredients
  • 1 c sesame seeds .
  • 1/2 c finely sliced pecans .
  • 3 c all-purpose flour .
  • 1 1/2 c sugar .
  • 1 lb unsalted butter, room temperature .
  • 2 c shredded sweetened coconut

Directions
  • Step #1 Preheat oven to 300°.
  • Step #2 Line baking sheets with Silpats (French nonstick baking mats).
  • Step #3 In the bowl of an electric mixer fitted with the paddle attachment, beat butter & sugar on medium speed until light & fluffy, about 2 mins.
  • Step #4 Add flour a half c at a time, mixing on lowish speed until well mixd.
  • Step #5 Remove bowl from mixer; with a wooden spoon or your hands, stir in the coconut, sesame seeds, & pecans.
  • Step #6 Divide dough into thirds.
  • Step #7 Roll into logs about 1 1/2 inches in diameter.
  • Step #8 Wrap each log in plastic, & put in the fridge until very firm, about 2 hrs.
  • Step #9 Using a sharp knife, cut logs into 1/4-inch-thick slices.
  • Step #10 Transfer to prepared baking sheets, about 1 1/2 inches apart.
  • Step #11 Bake until edges are golden, 20 to 30 mins.
  • Step #12 Transfer sheets to a wire rack to cool.
  • Step #13 Cool for 5 mins on baking sheets before transferring cookies to wire racks to cool completely.
