Stuffed And Roasted Eggplant (aubergine) Recipe

Ingredients
  • 2 medium eggplants .
  • 2 yellow squash .
  • 1 sweet potato .
  • 1/8 tsp black pepper (to taste) .
  • 1 c fat free mozzarella cheese .
  • 1/8 tsp table salt (to taste) .
  • vegetable oil cooking spray (1 spray) .
  • 2 tsps olive oil .
  • 2 medium onions .
  • 1 garlic clove, minced .
  • 2 zucchini .
  • 2 Italian tomatoes

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Slice eggplant lengthwise (do not peel).
  • Step #3 Place on a pan sprayed with cooking spray.
  • Step #4 Dice remaining vegetables into 1/4-inch pieces.
  • Step #5 Add garlic, oil & seasoning.
  • Step #6 Place into another pan.
  • Step #7 Bake both eggplants & vegetables in oven for 20 mins.
  • Step #8 Let rest for a few mins.
  • Step #9 Then scoop out center of eggplant & add to vegetable mix.
  • Step #10 Add cheese & fill eggplant shells.
  • Step #11 Place back in oven for 15 more mins.
