Orange And Purple Tossed Salad Recipe

Ingredients
  • 3/4 c vegetable oil .
  • Vinaigrette .
  • 3 oranges, peeled & thinly sliced .
  • Salad .
  • 1/4 c red wine vinegar .
  • 1/2 tsp salt .
  • 1/4 c green onions, sliced .
  • 1/4 tsp cracked black pepper, to taste .
  • 1 head loose leaf lettuce, rinsed, spun dry, sliced into bite size pieces .
  • 3 purple carrots, rinsed but UNPEELED, shredded (or cut into matchsticks) .
  • 1 tbsp honey, softened (I used a lavender infused honey)

Directions
  • Step #1 In a non-reactive bowl mix all the vinaigrette ingredients except for the oil.
  • Step #2 Whisk.
  • Step #3 Slowly whisk in the oil & incorporate.
  • Step #4 Vinaigrette is best prepared at least 1 hr in advance.
  • Step #5 Place the sliced lettuce in a salad bowl.
  • Step #6 Add the orange slices, carrots & green onions.
  • Step #7 Toss carefully.
  • Step #8 Serve vinaigrette on side.
  • Step #9 (Whisk dressing again just before serving.
  • Step #10 ).
  • Step #11 Serving is estimated.
