Step #1 In large pot, saute the garlic & onions in the oil until soft.
Step #2 In a mixer, rice, mix the black beans, & chicken stock together until partially mixed (leave little lumpy).
Step #3 Add the the mixed bean mixture to the sauteed garlic & onions.
Step #4 Add the apple juice, oregano, cumin, & salt & pepper to the pot.
Step #5 Cook over med-heat/flame 20 mins or until heated through while stirring every once in awhile.
Step #6 Can cook longer for extra melding of flavors.
Step #7 Serve with a dollop of sour cream per bowl & chips for dipping (if desired).
