Step #2 Cut off the top quarter of the head of garlic to expose the colves.
Step #3 Set the head in the middle of a large piece of tin foil wrap, & drizzle with 2 tsp of olive oil.
Step #4 Crimp the foil wrap around the garlic to enclose it completely.
Step #5 Bake in a 425F oven for 40 mins.
Step #6 Slice the bread thinly & brush with the remaining oil.
Step #7 Bake in the bottom half of the oven, on a cookie sheet, below the garlic, turning once until they are golden (about 4 mins each side - watch them!).
Step #8 Unwrap the garlic & squeeze out the cloves.
Step #9 Mix it with the goats cheese.
Step #10 Add salt & pepper to taste if you wish.
Step #11 Spread on the toasts.
