Dreaming Of The Islands Chicken And Rice Recipe

Ingredients
  • 1 c long-grain rice, uncooked .
  • 1 tbsp butter .
  • 1 (3 1/2 oz) jar macadamia nuts, toasted & sliced .
  • 1/4 tsp crushed red pepper flakes .
  • 1 (13 1/2 oz) can coconut milk .
  • 1 tbsp canola oil .
  • 1 (14 oz) can chicken broth .
  • 3/4 c unsweetened pineapple juice .
  • 4 lbs chicken pieces (give or take) .
  • 3/4 tsp fresh ground pepper, divided .
  • fresh pineapple (optional) .
  • 1 1/2 tsps sea salt, divided .
  • 4 green onions, sliced diagonally .
  • 1 small onion, sliced .
  • 3 garlic cloves, minced

Directions
  • Step #1 Sprinkle top chicken evenly with 1 tsps salt & 1/2 tsp pepper.
  • Step #2 Brown chicken in hot oil In a large-ish skillet over medium-high heat for 8-10 mins on each side.
  • Step #3 Removed chicken from skillet & drain, reserving 1 tbsps of drippings in skillet.
  • Step #4 Add butter & melt, stirring to loosen particles from bottom of skillet; add onion & saute a few mins.
  • Step #5 Add the rice & saute about 4 mins; add garlic & saute about 1 more min.
  • Step #6 Stir in the broth, coconut milk, pineapple juice & crushed red pepper.
  • Step #7 Return chicken to skillet.
  • Step #8 Sprinkle top the rest of salt & pepper & bring to a boil.
  • Step #9 Cover up, & let simmer about 30 mins, reduce heat to low, or until the rice is tender.
  • Step #10 Fluff the rice with a fork & sprinkle with the green onions & nuts.
  • Step #11 Garnish, if desired.
