Cajun Meatloaf With Roasted Sweet Potatoes Recipe

Ingredients
  • 2 lbs sweet potatoes, halved & cut into 1/2-inch slices .
  • 1/4 tsp salt .
  • 1 tbsp canola oil .
  • 1 large green bell pepper, sliced .
  • 1 tbsp canola oil .
  • 1/2 tsp hot sauce .
  • 1/4 tsp pepper .
  • 1/3 c ketchup .
  • 1 tbsp cajun seasoning .
  • 1/4 tsp onion powder .
  • 2 lbs ground turkey breast .
  • 1/4 c salsa .
  • 2 celery ribs, finely sliced

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Coat a roasting pan with cooking spray.
  • Step #3 In large bowl, oil, celery, bell pepper, Cajun seasoning, ketchup, mix turkey, onion powder & hot sauce.
  • Step #4 Shape into a 9x4 inch oval loaf.
  • Step #5 Place in roasting pan.
  • Step #6 In separate large bowl, pepper, salt, mix potatoes, & oil & toss to coat.
  • Step #7 Arrange potatoes around meatloaf.
  • Step #8 Bake 65-70 mins, or until meatloaf reaches internal temperature of 160 degrees & potatoes are tender.
  • Step #9 Spoon salsa over meatloaf for last 10 mins of cooking.
  • Step #10 Remove from oven.
  • Step #11 Let stand 5 mins & slice loaf.
